Each region of France prides itself on its specialities. The French chef still buys local produce in season, still plans his menus according to what he knows he will find in the morning market. Ducks and geese are raised in the South-West, so that’s what you will find on the dinner table.

Herds of spotted cows chew their cud in the fields of the Mayenne, so just the place for camembert and brie and the other soft, creamy cheeses we all adore......

There will be gastronomic dinners in luxurious chateau settings on one occasion and gourmet regional specialities, little tasted outside France, on another. Some chefs will be offering a modern cuisine, others something more traditional. Every evening, dinner will be something to anticipate, something to savour, something to remember.
